Beef Stroganoff

1 lb steak or beef stew meat, cut into bite sized pieces
1 onion, diced
1 can of mushrooms or 1 container of fresh mushrooms
1 can cream of mushroom soup
Seasoned salt
Garlic
Olive Oil

Rice or pasta to serve it over

Saute onion in olive oil for about two minutes on med-high heat. Add beef and cook about 5 minutes. Add mushrooms and cook for an additional 2-3 minutes. Add remaining ingredients and cook for about 5 more minutes on med-low heat. Serve over rice or pasta.

You can also make this in the crockpot. Just throw everything in together and cook for 4 hours on high or 6-8 hours on low.

Clam Chowder

6 cups clam juice
3 cans diced clams, not drained
4-6 potatoes, cut into bite sized pieces (I like red potatoes, then I don't peel them)
3-4 stalks celery, cut into bite sized pieces
1 onion diced
2 cans sweet corn, drained

1 stick butter
1 tsp garlic powder
dash of red pepper flakes
salt and pepper to taste

Combine and cook until potatoes and celery is soft, about 20 mins. Then add . . .

1 pt heavy whipping cream

Bi-Weekly Menu

We create menus for dinners every two weeks. Each menu has ten meals as we have leftover nights twice a week. My friend Betsy asked if I'd post my menu for her with a shopping list. Any side dishes are included under the main dish. We try at least one new meal with each menu, so I can't vouch for them tasting good as we haven't tried them. Those are starred.
